How to make peanut butter chocolate protein balls

Looking for a scrumptious treat that also packs in some muscle-building protein? Try these. Great as a pre- or post-workout energizing treat.

The grub:

3/4 cup natural peanut butter
1/4 cup natural- or vanilla-flavoured protein powder (e.g. Sunwarrior brand)
1 cup puffed cereal (e.g. kamut puffs, puffed rice, seven-grain puffed cereal)
1 to 3 tbsp plant-based milk (if needed)
3/4 cup non-dairy chocolate chips or chocolate bar broken into small pieces

The how-to:

Line a baking sheet with parchment paper.

Place peanut butter into a medium mixing bowl and heat in the microwave for about 30 seconds to soften. Add puffed cereal and protein powder, and mix well. If the mixture is too dry to stick together, add a few tablespoons of plant-based milk. If it’s too moist, add a few teaspoons of protein powder. Use your hands to roll mixture into 16 one-inch balls and place them on the baking sheet.

In a separate bowl, melt chocolate in the microwave in 30 second increments, stirring each time. You can also melt the chocolate in a double boiler or a small saucepan held overtop a larger saucepan containing a few inches of steaming water.

Dip each ball into the melted chocolate, turning to coat. Use a fork to remove each ball from the chocolate. Place on a baking sheet to cool.

Place in the fridge for one to two hours to set.

Makes 16 one-inch balls.
